Trapiche, Making Sugar

El Trapiche is the setup sugar cane farmers in Costa Rica have to extract the cane juice and make sugar. there are many that still use oxen to power the press, some now use electric presses. The whole process starts about 4am, getting the kilns started to wrapping up the cones of finished product about 6pm. Our neighbour has a trapiche and sells to a sugar company, you can also buy it in the feria (farmer's market) or super markets.

Dennis, tastes some of the cane foam, very tasty. The whole process takes a very long day, from starting the kilns at 5am, pressing the cane, boiling the cane juice. by about noon, the reduced liquid is ready to be pulled by being poured into a 10 foot trough and stirred with a paddle until thick like molasses, a tough job, then it is poured into molds to harden. This neighbourhood had about a dozen trapiche, now there are only 3.
